While Tanzania is known for its wildlife, not for its cuisine,
you will find the food on safari surprisingly tasty and varied.
The local diet is quite simple consisting of bean or meat
stews, and hardy fresh vegetables. The staple starch is maize
and the most common form is Ugali, which is a stiff
form of grits - edible, but not particularly palatable. For
this reason most accommodations serve western style cuisine,
enhanced with Zanzibar spices, exotic fruits and healthy fresh
produce.
